600g Kaninchenfilets

Olivenöl mit Thymian und 2 Zitronen von Le Jardin d’Orante zum Marinieren

Salz, Pfeffer

½ gehackte Zwiebel etwas Butter

150g Hugo Reitzel Randenwürfel

3dl Randensaft (Saft aus der Dose auffangen)

Fini Balsamico-Essig mit Orange

Salz, Pfeffer

3dl Kalbsfond

2EL Mehl

1EL körniger Senf von HUGO

1EL scharfer Weisswein-Senf von Grey Poupon

½ TL weisser Balsamico von Hugo Reitzel

½ dl Vollrahm

Salz, Pfeffer

Wie man Zubereitung

Fleisch: ca. 45 Minuten im auf 80°C vorgeheizten Backofen.

Randensauce: Zwiebel in der Butter andünsten.

Randenwürfel dazugeben, würzen und kurz mitdünsten.

Randensaft angiessen und 10 Minuten kochen lassen.

Mit dem Stabmixer fein mixen und mit Balsamico-Essig mit Orange abschmecken.

Evtl. nachwürzen.

Senfsauce: Kalbsfond und Mehl mischen und unter ständigem Rühren mit dem Schwingbesen zum Kochen bringen.

10 Minuten leise köcheln lassen bis die Sauce eine cremige Konsistenz bekommt.

Rahm hinzufügen, würzen und mit weissem Balsamico abschmecken.
